They're voices are way too good to sing a song like Ditto which requires little skill. The other songs give them the chance to shine with their talent.
For Sweet Juice they intentionally put in effort to sing in a style more similar to each other than they usually do, so I think they just wanted to flex that they CAN edit out their stylistic skills and sing in a simplified/unified way. Just to prove that they can do absolutely anything.
Their Ditto cover is really trippy to listen to, because they're so blended, but I agree that I prefer when they focus on contrasting with each other.
