The male waiters could be because of projection of power, if it was a publicly televised event. The waiters could be picked from highly loyal members of the military service to ensure safety. Maybe Xi Jinping has preference for different types of tea during different times of the day. Or maybe they're even different types of drink altogether. When drinking different types of Chinese tea (at least in tea shops), you usually change cups so the previous tea flavours doesn't carry over.

I think if figured out the magic trick. When the girl took the first egg while putting it in the bowl she switched it to her other hand. While taking the second bowl with the left hand she grabbed the second egg with the right. The left hand had the first egg, she slipped that egg into the bowl while taking the second egg and putting it in. She then slipped the third egg into her left hand. While picking up the bowl she quickly slipped that last egg in quickly, making sure it looked like she had vanished the third egg into the bowl. She first bowl had no egg in it cause she had not placed the first egg in there at all.
