I think she cooks a lot because she likes giving food to her friends/staff/coworkers. So when she says "i dont think it's enough" is not actually for herself but calculating the people she would give them to.

Yep, my dad is the same. He always makes too much food and freezes the rest/leftovers. Then he asks what he should cook, I tell him to eat what's left in the freezer and he always just brushes me off. I swear I haven't seen the back of our freezer since the day it set foot in our house
