A fun fact: Waffle house has its own meteorologists. Their main focus is to keep an eye on the severity of certain storms, including hurricanes. This is to tell which establishments need to be shut down or open on special terms. The general public can determine the severity of incoming storms by the informal, waffle house index.
Ps. If a waffle house closes down in your town, then the storm on the way is going to be bad.

Not just in the south but the most locations are in the south. Infact the government agency FEMA (Federal Emergency Management Agency) who is responsible for helping after natural disasters such as tornadoes or hurricanes use the Waffle House index to determine how bad damage is. Because Waffle House is open 25/7 365 days a year, as well as being equipped with generators or propane to continue to operate if there's a power outage, you'll rarely ever see one closed unless it's permanent. They are the last places to close and the first to reopen after a catastrophe. So if you see a Waffle House that's normally open, closed, something awful is about to happen or already has happened. Grits are like polenta just not as smooth. Grits are made from white corn ground only once so they feel rough or gritty. Polenta is grind white or yellow corn ground 3 or 4 times to make it more uniform and soft. The whole difference is in the texture.
Yes, these foods are comfort foods but they also help with hangovers. The fats and grease send the liver into overdrive to digest them. This also helps the liver to synthesize the alcohol in your blood. We always have at least a hamburger before going out then hit an all-night restaurant after closing time.

1st Waffle House visit (& 2nd & 3rd) were ALL during a visit to South Carolina, very close to Charleston.
    OH, MY.
Also, my 1st time trying grits. Cheese grits. Will never forget the joy.
Our eldest son was in a very tough school for the US Navy, this was in 2006.
Our hotel was next to a WH!!!
Kind of didn't want to eat anywhere else.
We had a super shy young waitress. Youngest son ordered a big breakfast, finished it, & ordered a 2nd one. The sweet young lady looked at me, for permission. I just smiled & said, "He's a teenaged boy, the food will be gone."
Many visits to WH around Dallas, TX, after landing at the airport & before the 2 hour drive to visit husband's family in East Texas. I have a picture of me & my husband in WF hats -- the paper ones the staff sometimes wear -- with our arms around our server. ❤❤❤
    Great coffee, too!!
I've often put good quality shredded cheese in scrambled eggs for our family, before they all grew up & moved away.
I have watched Josh & Ollie for years, also Gabi Kook's channel.❤

Waffle House is just a chain that serves Breakfast Food all day long. The name Waffle House was just chosen, because why not?
There is very rarely a moment when there is too much syrup. Most of the time, it's never enough. I don't understand Europeans that just drizzle a little bit of syrup on their pancakes or waffles. That's like dropping a 100 lb bomb on a huge factory and believing you're gonna destroy it. You need to drench your waffles or pancakes in syrup, because that stuff soaks in pretty fast, and you need some free syrup to actually eat it.

Houston Texas here and there is no such thing as too much butter, syrup, and/or slathered, scattered, smothered, covered, chunked, topped, diced, peppered and capped at the Waffle House.
The added entertainment if you are there late at night, is the icing on the cake.

Apple butter is applesauce that's cooked longer, until it caramelizes. It's often spiced with cinnamon. I prefer it without the cinnamon. It's heaven on buttered toast or in a buttered biscuit.

From Alabama. Waffle House is pretty fantastic. I don't actually care too much for sweet foods. However, when it comes to waffles, I would say that they were about half way there with the syrup. It probably could have used about another 4 tablespoons of butter as well.

I live in North Carolina in the southern US, we would have breakfast for supper occasionally (last meal of the day for you Andre). Pancakes with lots of syrup and sausages. We would dip our sausages in the syrup. In the public schools the children would have a pancake wrapped around a sausage on a stick for breakfast shaped like a corn dog. The children would smell like syrup until lunchtime which I could vouch for being a retired Art teacher.

Grits are a type of cornmeal made from dent corn, a less sweet variety of corn than the kind you might eat on the cob. The corn is dried and then ground, either coarsely to make traditional grits or finely to make instant grits. They can be a bit of an acquired taste for some. I don't care for them.
Dent corn, also known as field corn or grain corn, is a variety of maize (Zea mays) that is primarily grown for animal feed, industrial uses, and food processing. It gets its name from the small dent or depression that forms on the kernel's crown as it dries.
Sweet corn is harvested when the kernels are still tender and eaten as a vegetable, dent corn is allowed to mature on the stalk until the kernels are hard and dry. This makes it easier to store and process into various products like cornmeal, grits, flour, ethanol, and even plastics.

I've been to Waffle House _many.... many_ times. And a local diner that was the 3am spot in the town I grew up in that was much like this. I think every town, city, neighborhood, etc... has something like this for after clubbing to go to. Sit around, sober up, have some crazy salty and fatty foods... and then mosey home. It's a tradition. Arkansas and Southern Missouri.

Grits is short for hominy grits. Its ground up hominy. Hominy is corn that has been cooked in lye or other strong Alkaline to break it down to be human digestible. They expand in to popcorn like balls in the process. Its then dried in to crunchy balls. Grits is a filler food. its like rice. You eat it to get full, but the flavor comes from what you top it with. Brown sugar is my first choice, but butter is common. Shrimp an grits is also common in beach towns. Not many people like grits alone. But it was a staple food in a world were understandable corn was the main grain crop.
