      Looks good. Check out El Reno OK Onion burgers. Every year they have a big onion burger day the first Saturday on May. Not this year because of the pandemic but it would be a good stop. Sid's I think is the best.

    I made these a couple weeks ago. My elderly parent tried it and said these were identical to the burgers her mother used to make. Really made her happy with the memories associated with it. Also amazingly good!

    That's history in its most beautiful form right there. It shouldn't be about learning dates and names. It should be about culture and understanding the past in a visceral way. Something that makes you proud of where you come from.

      Except he ignored what actually makes the burger a slugburger. Soy flour (soy has always been 1 of the 3 main crops in the state, especially the NE corner) and pork. During the depression, if you were having to extend your meat in this area, you couldn't afford beef of any kind, to use day old bread like that (it was softened for meals with buttermilk, molasses, and gravy), and soy flour was the cheapest. Most southern food is the food that couldn't be sold with the rest of the crops or animals. Greens, livers, gravy (all the kinds), okra, and so many other foods were considered "poor people" food for a very long time. Now you can spend hundreds at a restaurant for southern, or soul food, and it tastes horrible. Because they do what George did. "Eh, I don't believe people really ate it this way even though they still do it, so I'll do it my way" I don't even really like them, but if someone is going to say they're preserving the history of a burger, they should do that. Hell, slugburger info is in the library and any librarian would have happily sent him information about it from here.

    hey thank you for highlighting the slug burger. i ate these all the time living in Corinth mississippi and burnsville mississippi. and you are right they use ALOT of soybean flour these days. also you showed a picture of the one i went to in corinth. cool beans dude ty for the trip down memory lane.

      They used soy flour then, too. As well as pork. Soy is and was a staple crop. Poor people couldn't afford beef. Yesterday's bread was used for today's meals and softened with (for breakfast) butter, molasses, (jelly, jam if any had been made); or gravy and for lunch or supper it was softened with butter and/or gravy; and sometimes as a snack, it was put in a glass of buttermilk and eaten that way. My family's been here generations and some of the stuff seemed weird to me (I grew up somewhere else) until I realized it was leftover from the depression era. A lot of people who raised cattle never had a proper steak until the late 40s or 50s in this area.

    I just found this probably because I previously looked up how to cook a slug burger and got a cornmeal version of the recipe. That was pretty good too. But I'm glad I happened upon this one! George has a great presenter voice. Happy to get in on the ground floor of this channel and I can't wait to see more from him!

      This dude inspired me to start making smash burgers quite a few months ago. I’ve finally got it down and my burgers have NEVER been better. That said, it really sucks making them because when you’re done the house legit smells like a diner. And not in a good way.

      @@likestoospooge Yep. Have become a full on smash burger convert. That said, the cast iron griddle on the gas grill outside is your best friend if the weather cooperates. This is coming from a person with a six burner dual-fuel indoor range with an industrial-style hood capable of lifting a small child off the floor.

    Being from Mississippi, I was excited to learn about some of the state's history, especially because I've never heard of the Slugburger, and the minute you explained that the burger originated in north Mississippi I immediately understood why I'd never heard of it. For those that don't know, Mississippi might as well be two states. There's North MS and South MS and everything from history to culture are vastly different. Still really cool to learn though! I can't wait to see the next video.

      ChrisContinues and if you go to north Mississippi slug burgers are never cooked on a flat top, they’re deep fried. He missed that part, and they were fried because they could cook them fast and get them out the door quicker for more business.

      I live in North Mississippi and I can confirm that Slugburgers are 100% a thing here. If you're ever in Corinth, MS, stop by the famous White Trolley OR The Slugburger Cafe. It's on Hwy 72 and easy to find. Just ask any local. lol IIRC, the basic Slugburger is still only $1.09. Growing up on the poor side, I've had many of these on a Saturday on the way to the river to catch some Catfish for a fish fry that night. :)

      Use soy flour and pork. Those are historically correct. You can research Mississippi at the time if you want, contact the library in Corinth, MS (and they'll email you the actual history and recipe for them). Or take it from me. My family has been in this little corner for a couple hundred years. My grandmother (who's still alive) was born just before the depression and was raised on these, as was my mother. Soy and pork were used a lot since they were cheap and everywhere.

    There was a video posted recently on Ballistic Burger about the original Slug Burger that somewhat contradicts the recipe/process that George has in this video. Worth watching and would also love to hear George's take on the differences- thought I doubt George will see this comment.

    I've lived in the Deep South for 30 years and have been in 35 US States.
    I've never been anywhere that was stranger than Northern Mississippi. Lots of nice people, but lots of really strange folks too.

    Question: Wouldn’t have buns been vastly different back then? I‘m German. We don’t have soft buns in our bakeries. I suspect the invention of these American soft buns to be a rather recent thing. My guess is, old bakeries in America used to have products that were much more similar to what European bakeries still Make today: Buns, that are only soft on the inside, but crispy on the outside.

    We can't bust heads like we used to. But we have our ways. One trick is to tell stories that don't go anywhere. Like the time I caught the ferry to Shelbyville. I needed a new heel for m'shoe. So I decided to go to Morganville, which is what they called Shelbyville in those days. So I tied an onion to my belt. Which was the style at the time. Now, to take the ferry cost a nickel, and in those days, nickels had pictures of slugs on 'em. Gimme five slugs for a quarter, you'd say. Now where was I... oh yeah. The important thing was that I had an onion tied to my belt, which was the style at the time. You couldn't get white onions, because of the war. The only thing you could get was those big yellow ones.

    I love how real this is! Don’t change the format! I love seeing how genuine it is, how real is state of awe over the burger, even the cussing adds the right context! My new most favorite show. I’m making a slug burger when I get home!

      Well, use pork and soy flour. He did that part wrong. My grandmother grew up on those, as did my mother. I now live where they are. Soy flour and pork were and are the actual ingredients used then and now. Beef cost too much then (I mean, if you have to extend your meat, you can't afford beef which was not eaten as much as now) and any leftover bread was saved to accompany the next meal (we have gravy that can go with any meal, along with honey and molasses and butter to soften it up). AFAIK, he did all the other burgers right, just got this one so horribly wrong I've have to comment.
