    I love shows like this that have historical restaurants talking about their origins and what they do to push themselves a little harder than the usual. Like Old Homestead where the head chefs personally go to Japan to go through the process of bidding on actual Kobe wagyu and taking the time to go through that whole complicated process to be able to serve a very expensive, but also very rare piece of meat. Like even though it's a $300 strip of meat which some might think is overpriced, they're probably not rolling in profit off of that since they have to travel to Japan and bid on the meat and go through all the complications of getting it back to America, I know it's not a usual aspect in food shows but I always love seeing the behind the scenes of restaurant running from where the food comes from to how they cook it and what really makes it special.
    Also Sean Evans on a show and the other person not leaving because they need to rush to the bathroom because their insides are on fire? Kinda a weird thing to see.

      @@jaybee4636 I think you should eat another breed of cow then ? wagyu is good because of its fat, if all of it melts, where's the point ? you can have another breed medium and have it taste as good as you'd have with a medium wagyu, without complaining that it is too small (people complain about that; the cooked meat which lost most its fat is smaller than the weight written on the menu smh) or too expensive

      @@jaybee4636 as already mentioned, even by the owners, you're welcome to any cut of steak in the restaurant cooked to your preference, however they draw the line with wagyu. The reality is, if you don't like that then you can take your hard earned money elsewhere, or perhaps even buy some wagyu from one of the few reputable companies online and cook it at home.
      Bottom line, they set and uphold the standard in which wagyu should be served.

    Absolutely my favorite episode of Gochi Gang. Don't get me wrong, I love Japan Village, but...talking about wagyu beef and even the history behind that steakhouse was super fun.

      Imagine having to destroy a high end piece of meat because some idiot asked for welldone. You're not supposed to eat anything well done if you want flavor and texture.

      @@NoNewfriendss Exactly! The E.Coli panic has destroyed many o' beautiful cuts of meat.
      People forget that if a restaurant doesn't handle it's meat properly and has an outbreak of food poisoning, they're gonna lose their restaurant (between the health department and those Yelp reviews). No good establishment wants that. Trust your cooks!

      @Zach Arbogast Yup. Well, nowadays.
      This all started back in the late 90's, when a rash of food poisoning traced to beef cropped up. Unfortunately, it was a newer strain of E.Coli (O157), and that particular mutation caused some people to die.
      So, the immediate reaction was "Die mother fuckers, DIE! Everything well done!"
      There's much better surveillance of the supply chain now, as well as by health departments. There are also better antibiotics if it crops up in a cow herd. So, while no one should eat raw cookie dough, the beef panic is over. Unfortunately, not everyone got the memo on that.
