In order to prevent the sides from burning or ballooning up, make a solution of water and powdered sugar and apply it to the top of the pastry on the sides before baking. A thin layer is enough, best done with a brush of some kind. It gives moisture to the pastry, makes it very pretty and flakey, and gives a delicious flavor. The mixture should be on the watery end, you can even add some lemon juice for a bit of tang if you like!
