Use a thermometer. Internal at 150°F+ no higher than 165°F. Remove fat and enjoy a tender Filet Mignon that tastes like Prime Rib. CAUTION: Do this outside, for the fat can catch fire, that's why you must wrap in foil. The smoke screen could hide a fleet, if you skip the foil or if it leaks fat. Try not to eat it all by yourself, though you will want to.
