To be fair, if I know that my work is gonna be filmed I will ask my staff to do a thorough cleaning beforehand. Not saying that they don't usually keep things clean, more so they probably did extra cleaning for the video.

For those asking about ice: it is added to control the proofing. Yeast needs heat to proof and it proofs faster when heat is added. The big bread machine uses lots of friction and adds heat. By cooling the dough they prolong the fermententation process which results in denser bread (no bubbles as much as you would see in a chiabata) and richer flavour. Try this trick next time you make pizza or pita dough or some rich bread like milk or brioche breada.

For me, nothing beats bear clean hands washed regularly throw all the cooking process, when you have gloves on, you have the wrong impression of cleanliness, they just may have been wearing them all day long, not to mention the interaction of food with all the chemicals released from them..

I noticed lot of you are asking about the ice part...so let me explain in short....if you use icy water the dough will be smooth...when you use cold water it will bubbly dough....yeast also plays a role here with the food processor...u don't want sour..over bubbly dough which would tear once the dough is stretched....so if you want to make pita bread or normal bread or pizza bread or bun using rice flour and yeast use ice and icy water...tht will make a lot of difference... Hope this clears the doubt...If I am wrong please correct me...
