As a single person cooking only for myself, I made an abbreviated version of this with just one eggplant. Instead of cooking the bell peppers and onions on the stove with meat, I diced them very, very small, and sprinkled them on top of the slices of eggplant to cook in my toaster oven. I had prepped the eggplant by slicing and salting, and putting them in a large colander for the water to drip off onto a plate a half hour before cooking. Then I added all the spices to olive oil, mixed well with a spoon, and brushed on both sides of the eggplant slices. Then I sprinkled the mix of yellow, orange and red bell peppers and onions onto the top of the eggplant slices. I cooked them for about 15 minutes, then added goat cheese and cooked for another 10 minutes. Wonderful! It really brought out the flavors of the bell pepper. I used parchment paper on the tray.
