Hey Mr Food theory, My little sister is allergic to eggs And she has always wanted to have cake. This has changes my world when I saw this and ran to the nearest safe way and got this cake mix. SHE LOVED IT!!! Thank you, and we make this together every weekend!

My family has always baked this chocolate cake with no eggs and no nuts because of my childhood best friend's long list of allergies. So I personally thought it was common knowledge 😅

@@annarose6575 yeah I think s/he was too lazy there's like ten egg substitutes you can use lol.
You can also substitute flax eggs (just flax seed and water) in a lot of recipes (my brother is also allergic to eggs and a lot more)
I've actually seen the opposite advice, which is to add in an extra egg and also replace the oil with butter and water with milk. Makes for a much richer and dense cake. The trouble with the eggless cake is that it doesn't keep its shape and will fall apart when you try to move it and put icing on it, and you DEFINITELY wouldn't be able to stack it.
I've heard the "add an extra egg" but I have not heard the oil/butter water/milk. I have a random box in my pantry, I might try that out.

My MIL does catering on the side, and the wedding cakes she makes are great. It's a box mix with twice the egg as instructed. And whipped frosting. Wonderful combination

Their not useless, cake has always served as a major part of the privileged society. And therefore, the look of it is at many times as important or at times even more important that the taste (things like weddings, high class parties, etc.). Eggs are used as structural security, so it makes sense why they implemeted it to the ingrediants.

My mom made cakes by boxes only. I decided to make one from scratch. There is maybe a few minutes between scratch & box. Scratch is much better, and healthier. Awesome episode.
I'm not 100% sure about healthier, at the end of the day it's a cake. making cakes from scratch is a lot funner, though. I love understanding all the different ingredients.

My fave lazy mufffin/cake recipe already just needs 2 ingredients (gingerbread cake boxed mix and pumpkin puree - not pie filling but pure puree). Makes quite a few moist and slightly dense "muffins", and is even better when you add some pumpkin spices. Definitely worth a try and fun for fall.

Pretty sure I remember a Factfiend episode about this. They've had the recipe to were you didn't need to add eggs like back in the 40s-50s, and they made it that way so that the housewives which were commonplace back then would have an easier time making cookies/brownies/cakes. But they felt like they weren't doing enough, and adding eggs didn't hurt so companies put eggs back on the recipe.

You absolutely need eggs or something similar when working with gluten free flours. In fact there's a lot of interesting science regarding the differences with gluten free cooking and why you sometimes need to do the opposite of what you would do when cooking with gluten/wheat. Gluten free flours typically have a much higher starch to protein ratio than wheat flour or rye, for example, and so eggs not only act as an emulsifer, but add needed extra protein into the mix to account for that difference in the flours themselves.
I’ve been watching this content for like 6 mon to a year now and I’ve finally been recommended one of your first episodes. And it was just as good as the new ones. I really appreciate the consistency you’ve maintained with food theory

Exactly this. As a lot of cooks will tell you, the first bite is with the eye. The cake without the egg might be passable, but if that was served to me I would absolutely take note of how crumbly it was. I might not necessarily say anything about it, but it will definitely affect my impressions of the person's baking skill.

In eggless baking I like to add sparking water, oil and some kind of binding agent, like xanthan gum, flax/chia/psyllium or similar seeds and that will replace egg, milk, butter whatever while having almost no allergens

You can use pumpkin pure and ditch the water, oil, and egg. It’s perfect with spiced cake and chocolate. It makes a denser, soft, and moist cake. :)

My grandmother and mother were bakers/ cake decorators and they almost never added eggs or oil to their boxed cakes (certain cakes had to have one of the other).
You can sub applesauce in for both, and it makes the cake more moist, with fewer calories, more fiber and vegetarian. They owned their business for 20+ years and everyone raved about cakes. Also, it saved tons of money since they could just buy industrial sized cans of applesauce and never had to worry about egg and oil market prices.

It’s.. KIND OF tasty, but it’s so freaking dense, you can’t really eat a lot of it. Plus... you get sick of it pretty soon. Also, you need A LOT of money for all those specific ingredients. Just... jeez. Feels like a waste.
