전주분이신 울엄마도 육수 만들어 붓진 않으심. 저건 지역적 특색인거임. 수미님 김치소는 좀 더 뻑뻑함. 그리해야 육수를 부었을때 질퍽해지지 않으니까요.
대신 고춧가루를 많이 넣기 때문에 거기로 흡수가 다 되면서 배추에도 양념이 골고루 다 스며드는거임.

@@user-es1tv6fe4r 깍두기처럼 무가 주재료인 김치는 빨리 발효돼서 풀을 안 넣어도 되는 걸로 알아요~ 하지만 겨울 김치를 담그면 풀을 넣는 게 좋겠죠
여름 김치에 보리풀을 넣는 경우가 있는데 보리가 찹쌀보다 탄수화물 비율이 적기 때문에 발효가 느려지기 때문이에요
