Theorists, we need to talk. My last video on milk was called out by another creator for spreading false information. Ann Reardon, also known as How To Cook That, reacted to my video and had a few corrections. Today, I'm going to be going through those fact checks to see what actually went wrong in that video and make sure we are setting everything straight. Is it a video I should be deleting off the channel? Let's find out.

Yeah I didn't see her criticizing him directly or something, she just expanded on it. The people are the ones completely twisting and blowing it out of proportion, because they were already biased against him, just like the media headlines and articles are doing most of the time. This is why it's very important for people to not bindly believe in something they just heard online before looking into the whole picture and making their own research before making a judgment. The easiest thing is to jump on a hate train with limited information for things people don't fully understand or because it doesn't align with their personal views.

Can't remember the quote, but I'll pass on the sentiment: Just because one argument is right, doesn't mean the other argument is wrong (both can be right, even if seemingly contradictory at first glance). I think Mat did a good job in showing that today. Tons of respect for both Mat, his team, and ofc Anne. The fact that the Food Theory team used potential mistakes and clear criticisms to teach even more about the subject is pretty fantastic and just plain smart.

@@paulj4955 This will probably be deleted as i've tried posting this several times and each time it gets removed. But here's my take on one example of how he is manipulating the information (re broccoli):
      1) In his video he compares a serving size of broccoli to a serving size of milk, even though earlier in the video he says his team didn't compare by serving size, they compared gram to gram
      2) The source he uses has 1 cup of broccoli as 180 mg of Calcium even though every other source you encounter has 1 cup of broccoli well under 100mg.
      3) All other sources include both volume (cups) and weight (grams). He made a point that his team doesn't use serving size due to it's variability so they used grams. Why didn't he use grams for broccoli if it's so readily available?
The answer is that every other source that is out there would show that you would absorb far more calcium by milk (gram per gram or serving by serving) except for the one dubious source he pulled, which coincidently goes against the methodology he stated earlier in this video.

Additionally, lactose intolerance isn't the only reason why a parent might be hoping there are adequate substitutes for the milk a child needs. That's part of the reason Ann focused on servings. If you're, say, a parent who cut out gluten when being gluten-free was popular, or you're a vegan, Ann's video shows that if you decide not to give your child milk, you can't just make them eat a serving of kale and call it even. If you provide content you frame as "science", you're quickly held to a pretty high standard. It's especially important in food science, because that's an area especially riddled with mis- and disinformation. Someone who loves to spread information should be able to put their ego aside enough to not bristle at every challenge and "attack", but instead reevaluate their approach and research.
I mean, consider what happened here. A food *scientist,* an expert in the field, held up a clip of misleading information as one of many examples of similar sentiments and added some context to it. Matpat *could* have ignored the rude comments and go to the more levelheaded scientist directly, developing a better piece of information collaboratively. Mat mentions, for example, the issues of comparing food on a nutritional level. A food scientist is the perfect person to consult on this and develop a good measuring or comparison system with.
It could have been an amazing collaboration. Ann is often open to comparing approaches and developing experiments together, she has approached other creators about this before when they challenged *her* information. So why did Mat instead focus on the rude comments and on how he was totally actually correct?
In the video I recommended above, Adam is at one point confronted with a similar issue where the information he provided was correct, but the way he presented it gave people the wrong impression. His response about that? Admitting that if he wants to educate, being correct is not is only duty. He also needs to communicate the correct information well and understandably.
I totally get being angry. But like... if you love truth, information and science, and if you love educating people, you should be able to vent off-camera and approach your script and performance without that emotional bias. At least enough to focus on "did I do this right?" over "am I technically correct?".

You don't even need to look at KRplus to know this. Just seeing how the mainstream media works, and it's clear that people are so used to relying on others to do the research for them and having that information packaged with a spicy label (See: pretty much everything from the sinking of the Maine to Russiagate) that not only are reactionary videos expected but will automatically be popular.

    • @envytee9659
      @envytee9659 2 년 전 +41

Yes, but her measuring system is just moronic. Serving size to serving size comparisons are one of the dumbest things you can ever do, because as this video shows, you can call just about anything a serving size.
That inconsistency results in comparisons that actually end up giving no useful information, and often times tend more towards misinformation. Again, as this video shows, milk has more calories than coke, but simply because milk claims a smaller serving size, this truth is distorted. Is it misinformation? Not exactly, since the nutrition per serving size is correct. But is this done in a way to trick people into thinking that this product has less calories than it does? Yes, absolutely.
The know people don't pay that much attention generally to calculate the true calories in everything they pick up, so they try to put a low serving size so they can have lower calories printed on the label. Look at most snacks and drinks. A small bag, which realistically one person will consume, is often shared up into multiple servings for the reason above.
This is why "serving size" is a garbage metric to conpare by. Mat knows it but is too kind to call her out on it, and she knows it but is trying to twist things to fit her stance.

Both nutrition and the human body are so complex that, once put together, is like trying to make a never ending science experiment with too many independent and independent variables to keep track for. I give MatPat credit for making all of the complexities he researches for days maybe even weeks, sound interesting, enjoyable to learn and digestible. I already have trouble focusing on stuff, but he makes it interesting in a way I many others are able to learn from it and enjoy it. Overall, I greatly dislike the fact that so many people were so quick to bash Food THeory along with other theory videos without taking a step back and thinking for a second. I love how people target inaccurate info in GT and FT as a reason to deem these channels are bad. Theorizing is like 90% guesstimation anyway. And for this episode in particular its hilarious to see how much cherry picking was done to make Mat look bad

Yeah, that’s true. Not being able to guess the plot of a movie that hasn’t come out is different than being wrong about the results of a specific study.

Funny how people forget the main thing “it’s just a theory” the phrase these channels are based on. It’s just a theory with facts behind it, either mostly correct or wrong.

The word 'Theory' holds more weight in scientific circles than most other people's 'facts'. In other words, for some there is no 'just' when talking about theory.

"Theory" means something different in the vernacular than it does in scientific jargon. In the vernacular, or layman's terms, it means a guess, claim, or supposition that may or may not be provable. In science, it means a claim, hypothesis, or question that has been tested to the point of being confirmed as fact. Saying "it's just a hypothesis" doesn't have the same ring to it, though.

As a chef, I can say that raw kale has only become popular in the past 15 years. If one cooks that much kale, it will shrink to what would be consider one serving. So, technically, Matpat was correct on the portion size, the best kind of correct.

My aunt would put tons of kale into my eggs and hotdogs. Maybe I’m being overdramatic since I don’t remember that much, but I think that would be great bowl to put in with the eggs and hotdogs. Definitely eatable in a day.
