good ramen recipe 10/10 would try again! the tomato balanced the heat of the lao gan ma, and the texture's divine. some ways to personalize this to taste:
depending on the tomato, there will be chunks of it by the time the noodle cooks. if you want a smoother soup, cut the tomato smaller - it will break down while cooking
it's safer to start with half tbsp of lao gan ma, taste, and add more. my tomato wasnt so acidic, so 1tbsp overwhelmed the soup, i ended up adding another tomato.
when chenle says 1 tomato im pretty sure it's the huge ones. I used 3 5cm-ish diameter to get the taste that I wanted. follow what you see in the vid, not the sub.
if you want smaller egg you can beat it first, and add it when the noodle's almost cooked! it will result into a silkier texture.
this works on most red-soup ramens! I used shin ramyun. remember to taste as you go! thank you Chenle for sharing this recipe!!
