Only thing I’d suggest is use butcher paper instead of foil for the meats. It’s better for the juiciness and bark preservation.

Also you should know your hardwoods. Hickory and mesquite are great for beef cuts. Apple, cherry and pecan should be used for pork products. They are not as harsh and give they give pork a light sweet flavor in the smoking process. Apple and cherry woods are great for chicken and fish also.
Post oak is what most pitmasters use in TX

Mustard spread all over the brisket to help adhesion.
Lawrys Season Salt, pepper, regular salt.
Tweak it with your own liking. Some people a little Johnnys Season salt as well. Or Cavenders is damn good to.
The mustard helps give it that black crust. It’s so good!
@@chloehennessey6813 These videos are filmed in South Korea and the guy asking the question is from Brazil, so maybe those brands don't exist. It would be more useful to know what's actually in those seasoned salts in order to reproduce them with what's locally available.
Salt, pepper, brown sugar, paprika or smoked paprika, mustard powder, garlic powder and ground cumin.
The mustard is used to just help the dry rub adhere to the meat. Now here is a secret to a good bark, spray your meats during the smoking process with straight apple juice. The natural sugars is what causes the good bark

Did a really good job but you wrapped the brisket way too soon needs to be there longer so the smoke can penetrate better and you can get a bark on it and you MUST let it sitt longer other then that it looks fantastic I’d definitely try it

2) Грудинка - это мясо с костями, сухожилиями и хрящами, оно жёсткое, потому что содержит соединительную ткань (белок коллаген).
3) Коллаген можно денатурировать и превратить в желатин. Но для этого нужен длительный нагрев и вода.
4) Поэтому, чтобы такое мясо стало мягким и вкусным, нужно сделать что-то из следующего:
- долго варить, и тогда получится хаш или холодец (что примерно одно и то же).
- длительно тушить в небольшом количестве воды, с закрытой крышкой, чтобы вода не испарилась.
- делать сувид в запечатанном пакете, откуда некуда деться воде из самого мяса.
- медленно готовить в техасской печи, постоянно добавляя воду. Вы заметили, как этот шеф регулярно брызгает на мясо водой из распылителя? В этом главный секрет, иначе вода из мяса испарится, коллаген не превратится в желатин и тогда мясо станет жёстким как башмак или волокнистым и сухим как верёвка.
Конечно, такое мясо очень вкусное и сочное, однако необходимо понимать то что продукты разложения коллагена и желатин после длительной термообработки представляют собой уже белки низкого качества, поскольку не содержат готовые к усвоению аминокислоты (кроме сувида). Но, друзья, когда мы 31 декабря закусываем холодцом или рулькой, 1 января лечимся хашем или на день рождения проводим пикник с техасским брускетом, разве нам есть до этого дело? Это невероятно вкусно, и точка!
Техасское барбекю, а готовят одни китайцы 🤔
