The first pancake always goes wrong. I think the trick is the right temperature, oil so it doesn't stick and something like a lid but tall enough to keep it hot and cook evenly inside.

They're amazing! I make them often. The key to them being fluffy is not over mixing the merengue with the yolk mixture. Wipe griddle with a little oil, cook on 300. I drip a tbl spoon of water before covering to help cook the inside. 👌🏼🤤

Не, я не повар, но яйца можно сразу желтки и белки отделить, не раскладывать по контейнерам и не взвешивать! если потом все равно в один таз все. Очень странные алгоритмы. Никто не куда не торопится 😁 Приходилось на улицах есть, как-то все так динамично, особенно за границей - надо ведь успеть побольше народу накормить. И менее вкусно от этого не становится
