At a place called Dyer's in Memphis, burgers are smashed paper thin and dipped in a skillet filled with hot beef tallow-a method that harkens back to the dawn of the original hamburger. Grease is an heirloom at Dyer's. When you bite into a burger from there, you're biting into history. That's because the same grease has been used since 1912! Imagine how many burgers he has eaten in his life and look how excited he is after taking his first couple of bites. I wish I enjoyed anything that much, not just food.
My very first bite of any properly made burger at home is just like that. Butter toasted bun, salt and pepper on the beef, fried up on stainless steel with a piece of American cheese melted on top. Some burger sauce on top and bottom bun, and a couple of dill pickle slices. Awwww yiss. There's almost nothing better.

I don’t know if it’s the general stress of owning and operating two restaurants, or if it’s pressure from complex/first we feast/somebody in his life, but he’s so awkward as a host. Sean is obviously the gold standard, but I think Jesus is great, George is behind Sean, and the chicks from the anime show are cool, but Alvin has always been awkward. Hopefully he progresses.

I'm from Memphis and I remember my dad telling me about how when Dyer's changed locations about 40 or 50 years ago, they had a police escort to transport the grease to the new spot. Their burger is seriously one of the most unique burgers I have ever had.

It’s amazing how the roots of so many burgers are meat onions pickles and mustard. That’s how I learned to eat a burger as a kid in the 60’s and that’s how I still prefer them today.
Please dear God, give us the gift of a second season with this delightful man.

We love Alvin as well, they are both main characters. The road trips were nice and these burger classes are essential.

George is like that teacher at school/college that was super quirky and passionate about the subject and ended up making it super interesting and fun to learn.

Fun fact: When Dyer's in Memphis moves locations, they have their vat of grease escorted by armed guard to it's new location.

I've actually been to dyers they strain the grease at the end of each day as well as add fresh every once and awhile. It sounds off putting but trust when I say worth the 8hr trip.
yep they havent changed the grease since 1912. BUT it is cleaned/filtered through cheesecloth to get all the bits and stuff out of it every night. that grease is almost considered a historical landmark itself. but yeah its the same base grease its just cleaned and re-seasoned daily.
Its like how a lot of secret sauces made by restaraunts are derived from the same pot of sauce that they simply add to over the years
