- Back in the early-1960s, before they wrote The 1,000 Fabulous Sandwiches, the authors would host brunch every Sunday. Their friend, Janet, would show up full of sunshine and smiles. But by her fourth mimosa she was hell in heels. Trashing people left and right leaving no one unscathed. So they nicknamed her the Brunch Witch. Which is why when it came time to write their cookbook, they decide to name a sandwich after her. But they didn’t want her catching on so they changed it to Brunchwich. At least, that the backstory I wish was true. In reality, they just mashed together the words “brunch” and “sandwich” landing us here. The ingredients are brunchy to be sure, toast, egg, cheese…but is it enough to earn the moniker Brunchwich?

Haha I noticed that. I have a theory he uses surgical scissors to get the bite precisely matched to the existing one.
It's not just the bread too, I notice it with any plus- up ingredient like cheese slices or tomatoes.

Making this a full sandwich was a good move. As an open-face sandwich, this feels like a slightly more complicated Egg-in-a-Hole.

I was just going to say that not adding bacon would be criminal.🤣 And I always find it irrationally humorous when you add additional bread, even if it only starts with 1 piece.

Swiss cheese is under used, IMHO. most folks go for cheddar or American on a bfast sandwich, but Swiss is where it's at!
I absolutely love this and I am in complete agreement with you on giving it less cook time for the perfect runny egg experience - I was happy with your choice of bacon, but that delicious ham I see you using at times would have been divine too, I bet! This is a go to sandwich that has to be near one of the most eaten sandwiches for me. While not necessarily the pageantry and creativity of building the sandwich - and not really the same protein with cheese all the time, but I think it is a way to hold an Eggs Benedict without hollandaise sauce running down your chin. Well in my case a full beard, either way I'm going to try the hot sauce, or one similar to this one here. 🥪
Have a family member who dislikes vinegar, and swears by that Pepper Plant sauce because it's not vinegar based like a lot of sauces. Need to try it for myself!

Its a GREAT idea pre non-stick pans. Cleaning egg out of regular pans is the worst.
In our current world, I'd almost fry the egg instead and have the chance to maximize the cheese situation
In 1965, this is great way to get the kids and the bully of a husband with a personality disorder that you are not legally allowed to divorce yet a decent meal before breaking down in the bathroom about being reduced to a housekeeping robot with no real sympathetic ears without making extra pans.
Now, I'd probably even fry the cheese big separately for a little melt and a little crunch.

agree regarding the egg, would buttering the bread help with the egg issue or does that take away from the sandwich as a whole?

Put a slice of ham under the egg instead of the bacon and add raspberry jam before eating

Im stunned. Barry went against his own cardinal rule of not adding meat to a vegetarian sandwich. The "brunch" excuse for using bacon is a tad weak.
This is, of course, not true. If I add chicken to a Celery Sandwich it becomes a Chicken and Celery Sandwich. I made this sandwich more of Brunchwich by adding the bacon.
C'mon, Barry, eggs and cheese are already animal proteins. You don't have to defend adding bacon.
"Not adding animal flesh" might be a more precise phrasing of his rule, but maybe it's a little too graphic or something?
